Instructions

  1. Prepare and Soak the Brinjals

    • Wash the brinjals thoroughly. Keep the stalks intact.
    • Make a deep cross slit (X-shape) from the bottom of each brinjal towards the stem, ensuring you do not cut all the way through.
    • Immediately submerge them in a bowl of water mixed with 1 tsp of salt for 10–15 minutes to prevent discoloration and remove any bitterness.
  1. Make the Masala Stuffing Paste

    • Heat a pan over low-medium flame. Dry roast the peanuts until crunchy. Add the sesame seeds, coriander seeds, cumin seeds, cinnamon, cloves, cardamoms, and dried red chilies. Toast until aromatic.
    • Add the desiccated coconut last and roast for 1 minute until lightly golden. Remove everything from heat and let it cool. 
    • Transfer the roasted spice mix into a blender. Add the ginger, garlic, ¼ cup of chopped onion, turmeric, salt, and 2–3 tbsp of water. Blend into a smooth, thick paste.
  1. Stuff the Brinjals

    • Drain the brinjals and pat them dry.
    • Gently open the quarters of each brinjal and generously stuff the prepared masala paste inside. Keep the leftover paste aside to use in the gravy.
  1. Cook the Curry

    • Heat 3 tbsp of oil in a wide pan or kadai. Add mustard seeds, cumin seeds, and curry leaves. Let them splutter.
    • Add the remaining ¾ cup of chopped onions and sauté until translucent and lightly golden.
    • Place the stuffed brinjals gently into the pan. Cover and cook on low heat for 5 minutes, carefully turning them occasionally so they get evenly seared and slightly softened.
    • Stir in the remaining leftover masala paste and sauté for 2 minutes until the raw smell disappears.
    • Pour in the tamarind extract along with about 1 cup of water to adjust the gravy consistency. Add jaggery if desired. Season with a little more salt if needed.
    • Cover and simmer the gravy on low heat for 15–20 minutes. The curry is fully cooked when the brinjals are completely tender and the oil separates, floating on top of the dark, rich gravy.
    • Garnish with fresh chopped coriander leaves and serve hot.
