  1. Marinate the Duck

    Wash the duck pieces thoroughly. In a large bowl, combine the meat with half of the ginger-garlic paste, half of the turmeric powder, half of the cumin powder, 1 tablespoon of mustard oil, and salt. Mix well and set aside for 30 minutes.

  1. Sear the Meat

    Heat 4 tbsp of mustard oil in a heavy-bottomed kadai or pressure cooker until smoking. Add whole spices and sliced onions, frying until golden brown. Add the marinated duck and fry on medium heat for 6–7 minutes to release the natural oils.

  1. Add Spices & Simmer

    Add the remaining turmeric, cumin, coriander, and black pepper powder. Stir well, cover, and cook on low flame for 10–15 minutes until the fat separates. If it sticks to the bottom, splash a tiny amount of warm water.

  1. Add Kumura

    Once the duck is semi-tender, add the diced ash gourd (kumura) to the pot. Toss it with the meat for 3–4 minutes.

  1. Pressure Cook or Simmer

    Add 1 to 1.5 cups of warm water (depending on how much gravy or jhul you prefer). If using a pot, cover and simmer on low flame for 30–45 minutes until both the meat and gourd are meltingly tender. (If pressure cooking, cook for 3–4 whistles on medium heat).

  1. Finish & Serve

    Sprinkle garam masala and give it a final stir. Serve piping hot with traditional warm sticky rice or steamed Joha rice.
