Marinate the Fish
- Clean the fish pieces thoroughly and pat them dry.
- Rub the fish with the turmeric powder, Kashmiri red chilli powder, and salt.
- Set aside to marinate for 15 minutes while you prepare the curry base.

Sauté the Aromatics
- Heat the coconut oil in a deep pan or a traditional clay pot (manchatti) over medium heat.
- Add the mustard seeds and fenugreek seeds. Let them splutter for a few seconds.
- Add the chopped onions, slit green chillies, and half of the curry leaves. Sauté until the onions turn translucent and soft.
- Stir in the ginger-garlic paste and cook for 1 minute until the raw aroma disappears.

Build the Spice Base
- Add the chopped tomato and cook until it turns soft and mushy.
- Turn the heat down to low. Add the coriander powder along with any remaining chilli powder or turmeric if you prefer a richer colour. Stir well for about 30 seconds.
- Pour in the tamarind extract and some coconut milk. Bring the mixture to a gentle boil.

Simmer the Fish
- Slide the marinated fish pieces gently into the boiling curry base.
- Cover the pan with a lid and simmer on low heat for 8 to 10 minutes until the fish is cooked through and tender. Tip: Do not stir vigorously with a spoon, or the fish will break. Gently swirl the pan instead.

Finish with Coconut Milk
- Lower the heat completely and pour in the coconut milk.
- Stir very gently to combine and let it simmer for just 1–2 minutes without letting it come to a hard boil, otherwise the coconut milk might split.
- Turn off the heat. Top with the remaining fresh curry leaves and drizzle an optional teaspoon of raw coconut oil over the surface for an extra burst of coastal flavour.
