Instructions

  1. Soak

    • Wash the black urad dal and rajma together in cold water 3–4 times.
    • Soak them in plenty of water overnight (or for at least 8–10 hours).
    • Drain the soaking water completely before cooking.
  1. Pressure Cook

    • Place the soaked dal, rajma, 4 cups of water, and 1 teaspoon of salt into a pressure cooker.
    • Cook for 7–8 whistles on medium heat until the lentils are completely soft and mashable.
    • Let the pressure release naturally. Open the lid and gently mash some of the lentils with the back of a ladle to create a creamy texture.
  1. Prepare the Masala

    • Heat 1 tablespoon of ghee and 1 tablespoon of butter in a large pan over medium heat.
    • Add the cumin seeds and let them splutter.
    • Add the chopped onions and sauté for 5–6 minutes until they turn light golden brown.
    • Mix in the ginger-garlic paste and sauté for another minute until the raw smell disappears.
    • Pour in the tomato puree, Kashmiri red chilli powder, and remaining salt. Cook this mixture for 7–8 minutes until the oil/butter begins to separate from the sides.
  1. Simmer

    • Add the cooked, mashed lentils along with their remaining cooking water into the pan. Mix well.
    • Bring the mixture to a boil, then lower the heat to a gentle simmer.
    • Simmer uncovered for 25–30 minutes, stirring frequently to prevent sticking. The longer it simmers, the creamier it becomes. Add a splash of hot water if it gets too thick.
  1. Finish

    • Stir in the remaining 2 tablespoons of butter, garam masala, and crushed kasuri methi. Simmer for 2 more minutes.
    • Turn off the heat and stir in the heavy cream thoroughly to achieve its signature rich texture.
    • Garnish with a swirl of cream and fresh coriander leaves. Serve hot alongside butter naan, roti, or jeera rice.
