Prepare the Potatoes
- Prick the boiled and peeled baby potatoes with a fork to allow the spices to soak in.
- Heat 3 tablespoons of oil in a pan over medium heat. Add the potatoes, a pinch of salt, red chili powder, and chaat masala.
- Sauté until the potatoes turn golden brown and crispy. Remove from the pan and set aside.

Make the Masala Paste
- In a blender, combine the soaked dry red chilies, garlic cloves, and ginger with a splash of water and blend into a smooth paste.
- In a separate bowl, puree the tomatoes and set them aside.

Cook the Gravy
- In the same pan, heat 2 tablespoons of oil. Add cumin seeds and a pinch of asafoetida.
- Add the chopped onions and sauté until they turn translucent and slightly golden.
- Add the ground garlic and chili paste, cooking for 1-2 minutes until the raw smell disappears.
- Pour in the tomato puree, coriander powder, and garam masala. Let the mixture cook until the oil begins to separate from the edges.
