Instructions

  1. Marinate the Fish

    1. Pat the washed fish steaks completely dry using paper towels.
    2. Rub them thoroughly with ½ teaspoon turmeric powder, ½ teaspoon salt, and 1 teaspoon mustard oil.
    3. Set aside to marinate for 15 minutes.
  1. Fry the Fish (with Caution)

    1. Heat 4 tablespoons of mustard oil in a heavy-bottomed pan or kadai until it reaches its smoking point. Turn down the heat slightly.
    2. Gently slide the fish pieces into the pan in a single layer. Cover the pan immediately with a lid to guard against oil splatters.
    3. Fry on medium heat for 2–3 minutes per side until light golden brown. Do not over-fry, or the fish will turn rubbery. Remove and set aside.
  1. Prepare the Aromatics

    1. In the same leftover oil, add the nigella seeds and bay leaf. Let them splutter for 20 seconds.
    2. Add the sliced onions and fry on low-medium heat until translucent and lightly golden (about 5-7 minutes).
    3. Stir in the ginger paste and garlic paste. Sauté for 2 minutes until the raw aroma completely disappears.
    4. Add the chopped tomatoes and a pinch of salt. Cook until the tomatoes turn soft and mushy.
  1. Cook the Spices (Kosha)

    1. In a small bowl, mix the turmeric, red chilli, cumin, and coriander powders with 2 tablespoons of water to form a smooth paste.
    2. Pour this spice slurry into the pan. Sauté (known as koshano) on medium heat until the raw smell of the spices dissipates and you see the oil separating from the sides of the mixture.
  1. Simmer the Gravy

    1. Pour in 1.5 cups of warm water and stir well. Bring the gravy to a rolling boil.
    2. Add the slit green chillies. Taste the gravy and adjust the salt if necessary.
    3. Gently slide in the fried fish pieces in a single layer so they do not break.
    4. Cover the pan and simmer on low heat for 7–8 minutes to allow the fish to absorb the flavors. 
  1. Final Touch

    1. Uncover the pan and sprinkle the Bengali garam masala powder.
    2. Garnish with chopped coriander leaves and turn off the heat.
    3. Let the curry rest covered for 2 minutes before serving.
