Ilish Bhapa (or Bhapa Ilish) is a signature Bengali delicacy consisting of tender Hilsa fish steaks gently steamed in a sharp, aromatic gravy of mustard, poppy seeds, and green chillies. Drizzled generously with raw mustard oil, this traditional recipe celebrates the natural oils and rich texture of the fish without any frying. Its rich source of omega-3 fatty acids, particularly EPA and DHA, makes it an essential component for maintaining heart health
Clean the fish steaks gently. Rub them evenly with ½ teaspoon of salt and ½ teaspoon of turmeric powder. Set aside for 10 minutes.
Soak the mustard and poppy seeds in warm water for 15–20 minutes to soften them. Drain and transfer to a blender along with 2 green chillies, grated coconut, and a pinch of salt. Tip: Grinding mustard seeds with salt and green chillies completely prevents the paste from turning bitter. Blend until perfectly smooth.
In a stainless steel tiffin container (with a tight lid), combine your smooth mustard paste, beaten yogurt, remaining turmeric powder, sugar, and 2 tablespoons of raw mustard oil. Mix well. Carefully coat each piece of marinated fish in this paste. Top the arrangement with the remaining slit green chillies and a final drizzle of mustard oil. Close the lid tightly.
Once done, let the container rest unopened for 10 minutes so the pungent vapors settle into the fish. Open carefully and serve hot alongside a mountain of piping hot steamed white rice.
