Toast the Sesame: Dry-roast the black sesame seeds in a pan over low heat until fragrant. Let them cool, then grind them into a smooth paste using a little water.

Sear the Meat: Heat mustard oil in a heavy-bottomed pan or pressure cooker. Add the chopped onions and sauté until translucent. Mix in the ginger-garlic paste and green chillies, frying until the raw smell disappears.

Cook the Pork: Add the pork pieces, turmeric, cumin powder, and salt. Cook the meat in its own juices on medium heat for 12–15 minutes until it turns light brown.

Simmer: Pour in a cup of warm water, cover the lid, and cook until the pork is tender. If using a pressure cooker, allow it to go for 3 to 4 whistles.

Add Sesame Paste: Lower the heat, pour in the black sesame slurry, and stir well to coat the pork uniformly.

Finish and Serve: Simmer uncovered for another 5 minutes until the gravy thickens and releases oil from the sesame. Garnish with fresh coriander or spring onions if desired.
