Instructions

  1. Marinate the Chicken

    1. Clean the chicken and place it in a large mixing bowl.
    2. Rub it thoroughly with lemon juice, ginger-garlic paste, turmeric, and salt.
    3. Cover and rest in the refrigerator for 30 minutes.
  1. Xacuti Masala Preparation

    1. Heat 1 teaspoon of oil in a pan over medium-low heat.
    2. Add the sliced onions and cook until they dehydrate and turn lightly golden.
    3. Add the grated fresh coconut and fry until the mixture turns deep golden-brown. Remove and let cool.
    4. In the same pan, dry-roast the whole spices (Kashmiri chillies, coriander, fennel, peppercorns, cloves, cinnamon, star anise, nutmeg, and mace) until aromatic.
    5. Turn off the flame, add the poppy seeds to the residual heat, and toss for 30 seconds.

    Once cooled, blend the roasted coconut, onions, spices, and tamarind pulp with a little water into a smooth, thick paste.

  1. Make the Curry

    1. Heat 3 tablespoons of oil in a heavy-bottomed pot or kadai.
    2. Add the finely chopped onions and sauté until soft, translucent, and golden-brown.
    3. Stir in the chopped tomatoes and cook until they turn soft and mushy.
    4. Increase the flame to high, add the marinated chicken, and sear for 4–5 minutes until the meat seals on all sides.
  1. Simmer and Finish

    1. Reduce the flame to medium, cover the pot, and let the chicken cook in its own juices for 8–10 minutes.
    2. Pour in the prepared ground Xacuti masala paste and mix thoroughly to coat the chicken.
    3. Add 1 to 2 cups of warm water to adjust the consistency to a thick, rich gravy.
    4. Bring it to a boil, then lower the heat, cover, and simmer for 15–20 minutes until the chicken is tender and oil separates on the surface.
    5. Taste to check the seasoning, adjust the salt if needed, and garnish with fresh coriander leaves.
