  1. Marinate and Fry

    Rub the fish head with salt and ½ tsp turmeric. Heat mustard oil in a deep pan (kadai) until smoking and fry the fish head pieces until crisp and golden brown. Break the head into smaller pieces while frying, remove, and set aside.

  1. Fry Potatoes

    In the same oil, fry the cubed potatoes until golden, remove, and set aside.

  1. Temper Spices

    Add ghee to the remaining oil in the pan. Temper with bay leaves, dried red chilies, cinnamon, cardamom, cloves, and cumin seeds until fragrant.

  1. Sauté Masala

    Turn heat to low, mix in cumin powder, remaining turmeric, and chili powder. Add ginger paste and braise for a minute.

  1. Add Fish & Rice

    Add the fried fish head pieces back in, stirring gently with the spices for about 5 minutes. Fold in the drained Gobindobhog rice, fried potatoes, and slit green chilies.

  1. Simmer

    Pour in about 1 cup of hot boiling water along with salt. Cover the pan and steam on the lowest possible heat for 10–15 minutes until the rice is tender and absorbs the liquid.

  1. Finish and Serve

    Uncover, add sugar, and gently stir to avoid breaking the rice. Sprinkle garam masala, add a final dash of ghee, and serve hot.
