Instructions

  1. Marinate the Fish: Coat the cleaned fish pieces with salt, i tsp of Mustard Oil and 1 tsp of turmeric powder. Let it marinate for 10-15 minutes.

  2. Fry the Fish: Heat a generous amount of mustard oil in a heavy-bottomed wok until it is smoking hot. Fry the fish in batches until they are golden-brown and slightly crispy on both sides. Remove and set aside.
  3. Tempering: In the same wok (removing excess oil if necessary, leaving about 3-4 tablespoons), lower the heat and add the bay leaf, green cardamoms, cloves, cinnamon, dried red chilies, and cumin seeds. Let them sizzle for 30 seconds.
  4. Fry the Onions: Add the finely sliced onion and fry for about 2 minutes. Then add the onion paste and cook until it turns golden-brown.
  5. Add Wet Spices: Stir in the ginger and garlic pastes. Cook for 1 minute until the raw smell disappears. Then, add the tomato puree and cook until the oil starts separating from the mixture.
  6. Add Dry Spices: In a small bowl, mix the Kashmiri red chili powder, cumin powder, coriander powder, and the extra 1/2 tsp of turmeric with a splash of water to make a paste. Add this to the wok and sauté for 2-3 minutes.
  7. Add Cashew Nut Paste (Optional): Add the Cashew nut paste and sauté for 2 minutes.
  8. Incorporate Yogurt & Seasoning: Lower the heat completely. Whisk in the beaten yogurt, sugar, and a pinch of salt. Stir continuously to prevent the yogurt from curdling. Cook until the gravy becomes shiny and well-blended.
  9. Simmer the Curry: Pour in about 1 cup of water and bring it to a rolling boil. Add the slit green chilies and gently lower the fried fish pieces into the gravy. Cover and let it simmer on low heat for 5-7 minutes.
  10. Finishing Touch: Uncover, sprinkle the Bengali garam masala powder, and drizzle the ghee over the top. Give it a gentle stir, let it sit for a minute, and serve.
