  1. Soak and Grind

    Deseed the chilies and soak them in the vinegar for 45 minutes. Dry-toast the cumin, coriander, peppercorns, cloves, and cinnamon until fragrant. Grind the toasted spices, soaked chilies, vinegar, garlic, ginger, turmeric, and jaggery into a smooth paste.

  1. Marinate

    Season the pork chunks with salt. Coat the pork generously in the vindaloo paste and let it marinate in the refrigerator for at least 4/6 hours  or overnight.

  1. Sauté Base

    Heat the oil or lard in a heavy-bottomed pot over medium heat. Add the finely chopped onions and sauté until soft and translucent.

  1. Add the Meat

    Add the marinated pork directly to the pot (do not sear). Stir thoroughly so the meat coats the onions, then pour in the hot water.

  1. Simmer

    Cover loosely and simmer on low heat for 60 to 90 minutes until the pork is spoon-tender and a rich red emulsion of fat and spices naturally develops.

  1. Rest and Serve

    Let it rest for 10 minutes off the heat. The flavor deepens if made one to two days in advance. Serve warm alongside plain basmati rice.
